Tiny bit of help w 700 build

OK looking for a few thoughts on the practicals of putting this together. Here's what I want:

** Rem 700 in .308 (this is just what I want, not b/c it's best or rem supporter or anything. It's actually a gun I *don't* have so starting there.)
** Want it in the Magpul stock, either Hunter or Enhanced, don't care much which but one of those.
** 20 - 24 barrel, not too picky but would lean toward the shorter end. Threaded would be a pretty big plus, not a must-have.

Use will be mostly ringing steel from 400-800 yards.

So, what is baffling me a little is all the action/barrel combos out there to start from. I could just buy this if they ever come back in stock. https://www.sportsmans.com/shooting...lt-action-rifle-308-winchester-22in/p/1707638.

But are the guts of those rifles significantly different? I'm not sure the AAC is the same as the other one.

I'd even just buy a barreled action since I know it's a drop-in to the stock I want.

So, what's the most important thing I need to know regarding the action/barrel combos out there?

Buying a new-ish Rem 700 could be hit or miss. It's too early to tell what their quality is like after recovering from bankruptcy.

How accurate do you want this rifle to be? Do you reload?

I'd like to be sub-MOA maybe out to 600-800 if that's doable. I do not reload, so I plan to shoot match grade loads for consistency.

I've been shooting this as demonstration ammunition and rifle testing ammunition for about 3 years now. Sub-MOA easy in the rifles I use.

Tell you a funny story…..
I bought several run-out Rem 700 Sendero's planning on building on them as switch barrels, which I have done.
Anyway, I have had all sorts of issues with these rifles, cocking pieces out of spec, timing issues and primary extraction problems. Being a part time 'smith, I have fixed nearly all of these issues except the cocking pieces, which I cannot get sent here.
Now, there were also some run-out Rem 700 SPS rifles that were reasonably cheap (for Australia) so I picked them up as well.
Bought a 300 RUM, 7-08 and a 260 Rem….not one has an issue.
So the 3 Sendero's cost me $2850AUD EACH. Full of issues!
The 3 SPS's cost me $1575AUD EACH.
I know what I'll be buying for any future projects. I cannot fault the SPS's in any way, extraction is fine, triggers adjusted nicely within Remingtons' specs and the 3 shoot quite well.
The wife uses the 7-08 and loves the 120g loads I made for her, she doesn't like barrel jump so had to make it lighter recoiling.
The 260 is getting re-barreled, action trued and new Jewell trigger and stock,
The 300 RUM shoots the Barnes 180g TTSX into nice clovers and I am very happy with it for a cheap rifle. Unsure what I'm doing with it yet, but it will stay a 300 RUM, I like the cartridge and what it can do so far.
