Texas surprise: Elk I took in Madison county Texas

A few weeks ago I was on the way to the bow stand in the Ranger. Just before getting to where I park, out steps this spike bull. Luckily for me I carry my 45-70 when I rode anywhere on our ranch. Took this guy at 45 yards. Needless to say, this was a great bonus kill for the season!

That's a good one to take he can kill larger bulls when sparring they are sometimes called assassins.

Yielded 165 lbs of elk burger, all the steak cuts, tender loins kept whole and ribs cut in racks for smoking. Going to be good for a while

I know you are from Texas, and smoking meat is probably second nature to you.

That being said, if you find a way to smoke elk ribs and they don't turn out like a 50 year old leather wallet left in the sun for a year I will be amazed.
