Smoker methods.

running a gas smoker here using a blend of sweet and pungent chips and chunks with a water pan... a good rub down with appropriate seasoning and whiskey/rum injection if it's butts or birds... for ribs I just run it wet... As far as temp stall, that's why I run wet and I changed out the regulator. I can pour the cobs to it until the critter cries uncle now, instead of beg/ plead/ and toss a couple of blow torches into the vents to help heat like I used to.

Butt smoked for 12 hours.... heavy rub, Talisker injection, and cherry/ mesquite for the wood
