I didn't technically hunt the cow, but it's a rib roast smoked with oak/hickory/pecan to about 124, and then seared directly over the coals. Duck fat potatoes, broccoli, and some spirits.

I did a choice grade rib roast smoked with oak in my Green Mountain grill up to 124 before a 10 min rest then served along with french onion soup. Great Christmas eve dinner.

Haven't ever used pecan for smoking. might have to try that.
 
Looks good! I am making one on my Traeger for Christmas day dinner. I hope it comes out as good as yours.
