I think it's almost a sin to cook deer, elk or antelope anymore than med rare! Just like sushi it's how you care for it the moment you make the harvest that effects the final product on the plate

That looked good to me.Speed goat one of my favorite,hard to tell on sage or not as much as they move around.Some areas I hunt have that and ag.Shot some that just lived in sage too,they where good. Shot a few archery over in your neighbor hood HW.
