Help me choose?!?

Ok, I'm semi new to this long range hunting but I must say its pretty addicting.
I have shot a sendero 300 rum for that past few years and have killed out to 700.
I'm looking to build a custom rifle for next season, so if u had to choose between a 300 rum or 338 rum or 338 edge to shoot 1200 yards on deer sized game (maybe elk eventually) what would you choose? And why?
If I do the 300 rum I'm stopping the sendero down to the action and starting over. The 338 I'll start new. Either is fine with me

The .300 Rum will do everything on your list just fine particularly with a fast twist barrel and throated for the 215-240gr bullets.

Check around but a 1:9 or 1:8.5 would probably be ideal.
