Hang your venicon?

Do you hang your venison if so how long?
I like to hang my Venison about two weeks if its cold enough.
The last one I hung was up for over a month the temps went down to the single
digits for a long time, we had 5 does we let them hang and they were tender way
beyond any deer that I ever had. we use garbage bags to cover it.

Depending on temp. and humidity, I always shoot for 7 days. Deer or Elk.

If I could I would for a couple of days, but NC is way to warm to allow me to unfortunately. At my buddies house in VA we will but only during late season when it's cold enough too.

I let mine hang for 7-14 days in the meat locker before butching them, I let them go as long as 30 days at 34/35 deg in the meat locker but have not seen any difference.

One hour or just long enough to get the skin off. Ha, Ha,

Hear in Texas it is to warm and humid so most get it boned and on ice as quick as
we can.

Young deer make good steaks and old deer make good ground/sausage.

If you have a cold storage box you can leave it in for 1 to 2 weeks @ 38o if it
stays constant .
