Had a family gathering. All 7 kids + 13 grand kids + a few friends and neighbors.

Followed instructions from one who had done 12 without a failure.

Everything played according to the game plan except the fire.

I think I, per recommendation, stacked the russian ollive logs to tightly in the bottom of the pit.

Filled the pit w/wood.
Lit'er off at 10 PM.
@ Midnight she had burned donw 1/2 way, per plan.
I placed the softball sized, some bigger, lava rock in the fire.

@ 0200 It was supposed to be burned to the bottm, nothing but coals and glowing red lava rock.

I woke up at 0200 and waaLaaa. The rocks were black and the coals were out.

Nervous city.

Dug out the rocks. Sweaty job.

Scratched the coals. Pulled up some of the logs. Got things flaming again.

Used the time to prep the porker.

Seasoned very heavily with Tony's. A Louisiana staple when ya haven't invented yer own yet.

Wrapped in alum foil. Wrapped in Chicken wire.
Made a basked of chicken wire w/handles for long rod for handling the porker.

Inserted the rocks. Placed more kindling, way more kindling over the rocks. Let'er burn down.

After pic prep, rocks were glowing in the moon light and coals were glowing below the rocks. Happy times.

Dug a trough for the porker.

Inserted porker.

Covered w/3/4" plywood and covered deeply w/dirt to seal the pit super good.

It was 0530, two and a half hours late. The thing was supposed to be served at 1400.

Woke up at 0730. Stuck my finger in the dirt down to the playwood. BURNED it. Duh?

Lifted the lid at 1500. Internal temp was 175* in the depths of the hams.

Turned out way better than outstanding. Fed 40 plus with 10#s picked off of what was left.

Next I gotta get ahold of one of those Texas porkers.

My refer wagon is ready to go. Maybe this winter.

You know, for a moment I thought that it was going to be about the ventilated pig that we saw in all the pics. ;)

Glad to hear that it turned out just fine!
