anyone have a favorite recipe for canned venison, other then water, little salt and pressure cook for 75 minuets?

Yep, salt is all you need; it will allow you to tailor the taste as you see it fit later. As @smokeeter noted, 90 minutes might be the norm.

I like my deer and elk almost always cooked medium rare. Any more done than that and it starts getting gamey and tough. Does canning create that gamey flavor?

Canning deer/elk does not make it gamey, if anything, it's the opposite. I send cases of it to AK to have on the boat as fridge space is limited and also saves on cook time.
