Bullet Weight for Deer Hunting

Mine isn't a STW but my 7 Rem Mag with 140 NBT's running at 3200+ I have never had a pass through from 50-530 has either dropped them in their tracks or run less than 40 yards. I always find the bullet jacket under the skin on the opposite side
 
I've shot a bunch with 160 accubond. Ranges were 250 to 400 or so and never caught a bullet. All were bangflops. These were shot at 3300+ fps. While I've never used the 140g accubonds, given what I see with 140s out of a 270wsm, I suspect they would not penetrate if heavy bone was hit.
 
I would load 160gr Accubonds around 3200fps and go out and shoot stuff and not worry.I've used 139gr Hornady Interbonds at 3400fps before too.That is a very tough bullet,but I don't think they even make them anymore.I have some 154gr Interbonds,I ran them around 3300fps,but I never shot anything but paper with them.The speeds the 7STW can push a bullet will really test how well they are made.
