Which would be a better round for 500-700 yard shooting for sheep, deer, etc? I am open to other caliber suggestions that you might have also.

What about a 7mm-300 Win.?
Ive been getting 3173 fps with a 180 Berger.
Using 76.5 grains H-1000
 
Heck they will all work. Unless you are making a single shot the magazine length may be the determining factor. Recoil and barrel life might also be a consideration.

the one with the best barrel , action and trigger. stock/bedding , scope and ammo. ie krieger, remington sendero, leup. short answer the remington sendero witha krieger barrel
 
I would nix the weatherby, unless you are going with an improved shoulder. And forget the rum, its fast but a horrible barrel burner. Consider the 7mm rem may and the 7mm wsm. I would go beltless and choose the 7wsm or a 7mm-300wsm.
