On paper which should have more recoil. the weatherby load is the max according the VV reloading manua for an 87 grain bullet and N150 Powder. The .308 load is one that an aquaintance at an f class match shoots.

.308 winchester
N150 44.9 grains
174 grain BT FMJ
Lapua brass trimmed to 2.008
large rifle primer
COAL 2.83

.240 weatherby magnum
N150-44.9 grains
87 Barns tipped tripple shock

EDIT:
Norma brass trimmed to 2.448
large rifle magnum primer
COAL unkown

Which one will recoil the most

I did a little guessing since rifle weight and bullet speed wasn't given.
I assumed 9 lbs and 3500fps for the 240 WBY & 11 lbs and 2650 fps for the 308 WIN.
My program gave the following.
240 WBY 8.3 ft/lbs recoil at 7.7 fps
308 WIN 11.8 ft/lbs at 8.3fps

So the answer is the 308 recoils harder and faster.
