I used that same optic until a recent upgrade. I was able to take it out to 650 consistently, but the glass was too foggy and the turrets too mushy/incorrect to get reliable hits beyond that.
For your purposes 9-13 for sure and def go with the pivot model. I started with a static 6-9 and it was never sufficient height for hunting. 13" will get you above most grasses and you can add a larger rear bag to accommodate.
7" isn't likely a temp change in this scenario.
What scope you using? I've had similar issues because my turrets wouldn't dial in a repeatable, consistent manner.
Second on the Leica 1600 to start with, but if you're set on some less expensive maybe look into the leupold TBR series. To get 600 yards consistently on game look for a rangefinder that is rated out to 800 or so. Luckily this kind of technology is getting cheaper rapidly.
