For the Colorado guys, if you haven't been there, check out Proud Souls BBQ on Federal in Denver. I usually leave their store hungry 😋. They are usually cooking something.

They have a great selection of rubs, sauces, pellets, etc.

We are going to try ribs again this afternoon. Hopefully I don't dry them out. I spray them lightly with apple juice while cooking them.

Instead of 3-2-1 I do 2-2-20 minutes. After I remove mine from the foil I only put them on long enough to glaze the sauce with good results. When you are removing them from the foil if you can't see the ends of the bones from the meat side they may be tough.
 
How long were those on for and temp?
3, 2, 1 Method.

250 for 3 hours, wrapped for 2 hours @ 275 (Bed of brown sugar & BBQ sauce - meat side down), 180 super smoke setting for 1 hour with a lather of BBQ sauce. Done.

Super smoke setting is for the beginning, but needed to keep them warm.

I guess I'm just a grumpy old man that just doesn't cotton up to the new fangled gadgets ...

I drive a manual transmission truck

I shoot a muzzle loading rifle (ignore the bunch of other stuff in the gun safe wearing turret scopes and talking to Strelok pro ... :D )

and I smoke on wood fire! (ok, also with propane)
