It's called cognitive dissonance. They know that the species homo sapiens is omnivorous. We do not have the gut of a vegetarian, we have the teeth of an omnivore and we have the forward looking binocular vision of a predator. We are in our very makeup meat eaters that can also eat plants when meat is in short supply. They "want" to be able to look down on others with self-righteous satisfaction that they're "gentle", "caring", "ethical" ... they want to think they're better than everyone else. So, some pretend meat slakes their thirst for animal products because they're the ultimate evolution of the self-deluding maniac. The craving for meat is biological in our species. The body is screaming out to be delivered highly bioavailable animal proteins and fats. The body doesn't spend much time asking for plants because nutrients from plants are not so readily bioavailable, they're protected inside indigestible fiber which our guts are pretty incompetent and defeating. This is why humans frequently use plant fibre as a laxative. You can find similar flavors of cognitive dissonance at the heart of most of society's current flirtations other leftist causes and that's predictable because the positions of the left are uniformly illogical and stupid in the extreme and to have that many illogical and stupid positions one must be capable of heroic feats of cognitive dissonance. Winston Smith came to love big brother with all his heart despite knowing that doing so was essentially suicide. Your standard leftist has very similar thought processes.
Remember folks, eat the fat leftists first or they'll turn into skinny leftists which don't taste nearly as good. You need marbling in the meat for it to be any good.
I struggle regularly with factual data compared to feelings and false narratives. I love stories of "survival TV shows" where certain only diet quickly goes out the window and they want some MEAT even if it a mouse or worm. Please let me know how this one turns out brother.
