Smoked nuts and cheese

Finally got back to the smoker for the holidays. After a forgettable 2020, this kinda fires up the Christmas spirit for me. Now for some of that fine whiskey our friends here at LRH have!

Looking good. I did my first fresh hams last weekend. Love smoking meats. I haven't tried cheese or nuts. What temp are you doing the cheese?
Its about as cold as possible, but here in the desert SW it is warmer. So I monitored it at 150° at its hottest point. Moved the cheese away from the side firebox.I have to check it every 5 minutes, rotate the blocks to keep melting at bay. I used a large handful of charcoal and just kept it fresh with wet chips.
They always turn out very well.
About 45 minutes total smoke time.
 
That's a great one too. Did you pickle cure your roast and smoke?
My buddy that smoke the cheese also smoked the corned beef. I think he just got the corned beef on sale like after St Patty's Day cheap and then smoke and froze it. He's do the same for the cheese and then take them while he was hunting.
 
Oh I should say he sliced it first and then vacuum sealed prior to freezing. That way he'd just thaw and maybe reheat if he wanted while hunting.
 
Pulled hams from the brine today they will go in the smokehouse tonight would be mighty tasty with some smoked cheese may have to go to town a get a block what type turns out the best
 
I never got to hunt with him but he's a plethora of firearms/ bullet/ hunting knowledge. He's the kinda guy that gun writers would call to think of new articles to write. I don't get to see him much now, and I don't always agree with his ideas. But I ALWAYS take them into consideration. He's forgotten more than I'll ever know or do lol.
 
Same here. And yet we looked lol. Smoked cheese is awesome. So is smoked corned beef.
Oh dang it you guys are making me hungry. I loooooove corned beef! Really there's not a lot of food I don't like. It's getting to be a problem. Over this pandemic (And having twins in June) and all that comes with it I've gotten less exercise and had more time to stay home and eat as the extra things I normally do aren't happening anymore. It's resulted in me putting on what my wife has lovingly called my "COVID 19". Actually had been about 19 pounds come to think of it...
