What are your thoughts on long range shooting (500 yards or less) from a pig saddle or similar device mounted on tripod?

My thoughts are: It works! Do it all the time.
You have anything specific to that topic you want to know?
How stable can you really get, can you watch for shot placement or does it move to much, can you get multi shots off without adjusting tripod placement? I'm looking at night stalker brand to get into trying one at a reasonable price point

Applications will be for getting wife into longer range shooting 500 yards or less with a 260 remington, and possibly take on an elk/mule deer hunt.

Most rests will be fairly good for one shot. Recoil will determine how good they are for seeing hits and staying on or at least close to the target for follow up shots. When hunting, staying on the animal during recoil is very important, especially in wooded locations. If you lose it during recoil, and the animal moves where it becomes concealed by trees, you could have considerable trouble finding it again in the scope. Especially if you don't have a spotter who can direct you.
Open terrain is easier in that respect.
How you shoot, and what you shoot from can be more important than what you are shooting.

I have a Bog Pod with rifle rest....havent used it a bunch...but it holds the rifle well...has Velcro straps to keep rifle from falling off the the rest....can also pull the rifle off and use it for setting the binos on for classing....but they also have a bino setup....it works really well....use it as a walking stick too.....

I though about getting the bogpod deathgrip to try and an internet search led me to want to try this night stalker brand it's about $100 more than the bogpod, I have Caldwell field pods both the chair with built in rest and portable one, also have primos tripod trigger stick. I like the idea of a gun saddle to take weight of the gun off plus its hands free and still ready to shoot.

Hog or pig saddles work great for what they are designed for. I recommend a manfrotto ball head with the pistol grip to help with traversing the set up in the field.
I looked up that manfrotto ball head looks good, will it stand up to recoil? I use manfrotto tripod and head for my big eyes for glassing

yep. I would go to the flat range and get use to it first before fielding it. The pistol grip is has another function, helps get shoulder pressure in weird positions for recoil control. Since the rifle is on the saddle you don't need to engage toe support, so you might as well use you free arm(support) for something useful. For downward shooting, there's some refinement, you might need to use a sling wrapped on your foot for down ward pressure. This is for extreme angles.

Other tips; mount the forend closest to the magazine. Don't clamp anything in the middle or by the muzzle side of the forend and don't go to tight. YOU can probably get away with it, at 500 yards, even at 1000, but allowing just enough freedom in the mount allows you to adjust for cant, while still still supporting the rifle independent of the shooter. There's a sweet spot.

Bog Pod also has ball head....
Wheni purchased it...i purchased several pieces...
The rifle support...bino wrap..and extra fast detachable for leaving on spotting scope..the bino adapter..and extra window mounts to have for vehicles and for the razor for ex to be able to rest a rifle(handicap).....
I use the ballhead with binos....really handy on uneven grounds....

I was shooting my setup at the range yesterday before work. Custom 6x47 that I had in my hogg saddle, manfrotto cpistolgrip ballhead, piggy saddle tripod. Once you get used to it, you can easily hit at 500yds.

I use a manfroto tripod with a kopfjager reaper grip. This combo works great for 500 and in shots. I use it to hunt hogs at night. I am shooting a savage msr10 in 308. I can see my hits and follow up shots are a breeze. I've shot as many as 10 hogs in a row at 200 yards plus before they escaped to a safe distance.
