I'm looking at a buying either a new 110 Long Range Hunter or an older 111 Long Range Hunter in .300 WinMag.
Regardless of which rifle I buy I'm absolutely changing the stock to one with a vertical pistol grip (M40 A3/5)

Does anyone know if there's a mechanical difference between the older 111 and the newer 110 models?

My understanding is that the barreled action is the same, the stock is an updated design and they scrambled up their whole model numbering system. I work retail firearms sales. The new models are still being phased in and older models are still in distributor inventory and it makes ordering Savages a pain right now.

I have a similar understanding. There was an article in the June's issue of the American Rifleman about the new naming convention and basically said actions remains unchanged.
