Turkey and Bacon

    1 wild turkey breast
    Some Italian sausage [remove the casing]
    1 package bacon [whatever you like]
    Creole butter injectable marinade [I use the lemon butter garlic]

    Pound the breast to about 3/8" thick [between plastic wrap] you may have to butterfly the breast depending how thick it is to start.

    Inject the turkey with the marinade

    layer the sausage on the flattened breast about 1/4" thick

    roll it up like a log and wrap in bacon

    tie the log with butchers twine to secure everything

    put in fridge for 4 hours or so

    place turkey roll on a rack in a roasting pan

    bake at 350 covered for an hour then uncover and finish till internal temp is 160 degrees.

    remove from pan and let it rest for 10 min. remove twine slice and eat.
