A few weeks ago I was on the way to the bow stand in the Ranger. Just before getting to where I park, out steps this spike bull. Luckily for me I carry my 45-70 when I rode anywhere on our ranch. Took this guy at 45 yards. Needless to say, this was a great bonus kill for the season!

That's a good one to take he can kill larger bulls when sparring they are sometimes called assassins.
 
and ribs cut in racks for smoking.
I know you are from Texas, and smoking meat is probably second nature to you.

That being said, if you find a way to smoke elk ribs and they don't turn out like a 50 year old leather wallet left in the sun for a year I will be amazed.
