I have a Savage LRH 7mm Rem Mag that I reload 168 gr hunting VLD's for. I started out with the maximum overall length that would fit in the mag and started at max powder charge and worked down .2 grains at a time. Didn't take me long to find a winner.
As far as factory ammo goes I've had really good luck with the Hornady Match 168 hpbt, 168 amax, and 178 hpbt. Federal Gold Medal Match 168's shot well too but is quite a bit slower than the Hornady offerings.

71 grains is the max load per Hodgdon. I have read of others using more with no signs of pressure. I worked my way up to 71 and that was by far the most accurate from my set up.
I also have a LRH in 7mm RM. It has been a great gun so far. I am getting .5 moa groups at 100 yards with 71 grs of H1000, Berger 168 gr hunting vld's, and CCI 250 primers. As far as scopes pick one that suits your needs. The ones you mentioned are all nice scopes.
I don't think we are too critical. I personally expect to get what I pay for. Shot placement, load development, and practice are all essential. However some bullets just don't perform as advertised on game. You'll never know how a bullet performs on an animal until you or a reliable source does...
