Sourdough anyone?

Does anyone else play around with sourdough? I made a starter last September and have been sharing it with family and friends. Best durn hotcakes you ever ate.

Make your own starter (in a non-metalic bowl):
--flour
--1 package of dry yeast
--enough warm water to make it a thick dough
--cover with a dish cloth

Then, set it on the counter and the next morning you'll have a nice yeast smelling sponge. Use 2/3 of it and add more flour and water to your starter and you're good to go...forever.

For hotcakes, I usually throw in some sugar and a couple of eggs. Add milk or water to make your batter thinner if you like thinner hotcakes. A little baking soda will really bring it to life...

I have made it this way because at 10,000 + feet altitude it still rises and makes good biscuits
or banyan.

Do you know if you can start it with instant potatoes? I was just wondering as some of my kids have celiac and are allergic to the gluten in wheat, rye, barley etc..

Yes.

It is the way I always started.

I hadn't though about the gluten until now and I am going to suggest the sourdough to
my sister in law because she has a hard time baking bread that doesn't have gluten.
