Average antelope gutted and skinned 61 lbs, you get 28-32 lbs of meat. Antelope come in two sizes, full and little, it looks like the bucks will out weigh the does but it will only be by a few lbs at best, if I remember right the largest I have seen was 68lbs on the rail.
Average deer 82 lbs gutted and skinned, you get 48-52 lbs of meat. A large mule deer buck will be in the 120-200lbs and you can have 65-80lbs of meat, the buck very a lot but the large, rutted up bucks will weigh in at the same as a yearling cow elk. The larges buck mule deer I've seen was 232 on the rail.
You get roughly a 50% yield of meat on animals taken care of in the field, in a cutting shop your average is 64%. A lot of animals the hide and head and legs are about 1/3 the hanging weight. An example is a cow elk averages 250 lbs hanging weight, the hide and head and legs will weigh about 75 lbs.
