Yeah, I'd say between 80 and 110 pounds.

No expert here, but I believe a dressed buck pronghorn goes in the 100-125 range. Mule deer I have no clue.

I was going for does and bucks and i'm probably a bit light on the buck and maybe heavy on the doe

Two mature goats will be lighter than one mature mulie. Ya gotta be carefull deboneing a goat to keep the hair off the meat!! If you drag a goat very far its gonna be bald, thay shed thier hair very easy.
Your going to have to be in good shape to haul a mature deboned mulie, cape, horns and gun very far.....If I remember right we weighed a small mulie last year that went 75#, dont sound like much till you try packing it uphill???

Antelope are about the same size as a German shepherd. A boned out mulie is going to be as much as one guy wants to handle. I would say that the 75# mark is pretty close. Not counting the cape and head. It'll take two guys to get out a mulie in one trip if you plan on taking the head and cape. One guy can handle meat and capped horns, no bone or hide. Your not going to carry any other gear at the same time, other than maybe a rifle.

Average antelope gutted and skinned 61 lbs, you get 28-32 lbs of meat. Antelope come in two sizes, full and little, it looks like the bucks will out weigh the does but it will only be by a few lbs at best, if I remember right the largest I have seen was 68lbs on the rail.

Average deer 82 lbs gutted and skinned, you get 48-52 lbs of meat. A large mule deer buck will be in the 120-200lbs and you can have 65-80lbs of meat, the buck very a lot but the large, rutted up bucks will weigh in at the same as a yearling cow elk. The larges buck mule deer I've seen was 232 on the rail.

You get roughly a 50% yield of meat on animals taken care of in the field, in a cutting shop your average is 64%. A lot of animals the hide and head and legs are about 1/3 the hanging weight. An example is a cow elk averages 250 lbs hanging weight, the hide and head and legs will weigh about 75 lbs.
