Many of the really good camping gear stores such as REI will have a "try" frame which is like a "try" shotgun stock. You adjust it until everything is correct and then you know which pack frames will fit you best.

Eberlestock makes phenomenal packs and I love my J104, but I'm only 6'-0". I would give those guys a call and ask them... They have been very friendly and helpful whenever i called them and I'm sure they've run across your situation before. Good luck.

I'm 6'4", 250 and Cabelas has a couple nice sleeping bags that are pently big enough for me.
