Get a photo or two of the bolt face and the extractor set up. A 308 typically has a 480" bolt face.
The 7mm you want will typically use a .545" bolt face.
So we gotta get rid of .065" of unwanted material. That's only .0325" per side. So long as the extractor will still work and there is sufficient meat left to envelop the case rim it should work just fine. Have you made sure there is enough ejection port? 2.825" is the cartridge AOL. That's right there with most 308 stuff so you should be fine. Never hurts to check though.
Last thing is feeding. Will this case fit through the mortises/feed rails machined in the bottom of the action? If not these can usually be whittled on to make them work, but not always. These short/fat cartridges are known for being a bit problematic when it comes to feeding. A center feed magazine (like the ones from Bansner) solves this pretty well.
