Easiest way I've found is to pull a cleaning rod through the bore with a brush on it. Mark the rod near where it's coming out(action or muzzle-doesn't matter here) and pull it until the mark is at the same spot rotation wise again, say 12 o'clock both times. Measure the distance after you mark again, and that's roughly your twist.
For deer sized game, most of the 140- 160 grain loads in the previous pages will work well, with rl22, 7828, retumbo, rl25 and a few other powders being notable. Keep her close to full (charge wise)and use enough primer and you'll be fine.
