Shooting conditions make a dramatic difference as well. I have had the opportunity to take a shot at trophy animals at 600 yards that I passed on because I was not confident in shooting in the conditions at that time (wind speed and several directional changes over the distance from me to the target)

Other times, as mentioned, 1000 yards is almost boring to hit 1/2 moa sized targets at so it all comes down to knowing your conditions or not as to what is long range shooting and what is extreme range shooting.

In ideal conditions, again, I feel its pretty much anything over 1000 yards.

I think like others have mentioned it depends on the cartridge your shooting. I can tell you with my 338 Edge AI at 1100-1200 yards cold bore shots on an MOA size target become much more difficult wind reading wise and my cold bore hit confidence is dramatically droped compared to 1000 and below, even in good conditions (0-5mph).
